The Champagne 'Esprit Nature' by Henri Giraud is the manifesto of the Révolution Nature, desired by Claude Giraud. Since 2016, the cuvée has abandoned all steel processing in favor of oak from the Argonne forest. The blend of Pinot Noir and Chardonnay includes half of perpetual reserve wines preserved since 1990, a choice that allows for the concentration of flavor and territoriality in the wine. Aromas of pear, peach, vanilla, and candied lemon peel precede a fresh and creamy sip, full-bodied with marked minerality, and a long, winey finish. To be served with roasted salmon
